A hospitality venue designed to be the reason for a journey, planned around a distinctive experience rather than convenience or passing footfall.
Destination versus convenience venues
The two models are planned differently from the first day. A convenience venue optimises for proximity and speed: it wins because it is the nearest acceptable option, so site selection follows footfall and the menu follows throughput. A destination venue has to justify a journey, so it is planned around an experience that cannot be substituted nearby, and it can accept a site that footfall alone would not support.
Avanti Food & Beverage operates both models deliberately. Sir Fluffy Smart Convenience Centres are convenience: unstaffed, placed where people already are — offices, campuses, hospitals, airports and residential communities. The Big Fish and Jannah Restaurants are destination concepts, built around experiences and cuisine that people choose to travel for.
What a destination concept has to get right
Three things decide whether a destination concept survives past its opening year. The first is a specific reason to visit that can be described in one sentence. The second is an operating model that reproduces that reason on an ordinary Tuesday, not only at launch. The third is a capacity and service design that matches the demand pattern a destination actually produces, which is peaked and weekend-weighted rather than evenly spread.
Concepts fail most often on the second point. An experience that depends on individual staff performance, unusual supply or founder presence cannot be repeated reliably, and cannot be replicated in a second location.

How Avanti plans concepts

That structure is the reason a concept can be specified end to end before it opens — the supply chain, the technology and the building are not three separate procurement exercises.
